Pancakes from Sarah Swanson

"It is a recipe passed down from my "oma" to my mom",
Pancakes

1 1/3 cup flour
1 tsp. baking powder
1/2 tsp salt
3 tbsp sugar
1/4 tsp vanilla
1 egg
2 cups milk ( more for thinner batter)
3 tbsp veg oil

Stir dry ingredients together. Beat egg, add milk.
Make a well in the dry ingredients and add egg/milk mixture.
Add veg oil and vanilla. Stir well. Batter will have a few lumps.
Drop by 1/4 cupfuls on hot griddle.
Flip pancakes when underside is brown.

The best way to eat these pancakes is to spread butter, sprinkle with sugar and squeeze fresh orange juice on them!

Another Biscuit Recipe

Alton Brown from the Food Network's Good Eats

I think he is great, you learn something about the food you are cooking as well as why and how.

Southern Biscuits

2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled
Directions
Preheat oven to 450 degrees.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Biscuits Elfriede

Biscuits Elfriede (named after my mom...)

2 Cups Flour (white or Whole wheat)
3 tsp Baking Powder
½ tsp Salt
2 Tbs Sugar, more or less if you want savoury biscuits, less sugar
Mix dry ingredients well

Then, cut with a pastry blender
½ cup Butter or Margarine (butter is better tasting, I think)
OPTION: add 1/2 cup grated strong cheese like blue or old cheddar
1 Egg may be added if desired
½ cup Milk or Yogourt
Mix to make sticky
Knead together but do not mix more than 18 times

Roll out flat and cut into desired shapes.

Bake in a 400* preheated oven for 15 minutes or less.

Chocolate Pudding Extraordinaire

Pre-Heat oven to 350*

THE BATTER
1 cup flour
2 tsp Baking Powder
½ tsp Salt
¾ cup Brown Sugar
Mix together and add the following:

3Tbs Cocoa
½ cup Milk or Yogourt
¾ cup Raisins
2 Tbs Butter melted in a baking pan
Add to batter and mix well

THE SAUCE
¾ cup Brown Sugar
3 Tbs Ccoa
1 ¾ cup boiling water or hot coffee for a caffeine buzz...
Mix together well. Pour over batter in buttered baking pan.

Bake in Pre-heated oven at 350* for 40 minutes

To make it more of a sugar rush, add ¾ cup of semi-sweet chocolate chips.

5 Minute Chocolate Mug Cake

5 Minute Chocolate Mug Cake

4 Tablespoons flour
4 Tablespoons sugar
2 Tablespoons cocoa
1/8 teaspoon baking powder (optional) This is optional as I think it makes the cake more light and fluffy.

1 egg, beaten
3 Tablespoons milk
3 Tablespoons oil, OR 2 Tablespoons melted butter and 1 Tablespoon oil
3 Tablespoons chocolate chips (optional)
A Tiny Splash vanilla extract
1 large Coffee Mug, a V-shaped one is best rather than straight-sided

Add dry ingredients to mug and mix well
Add the beaten egg and mix thoroughly
Pour in the milk, oil and mix well
Add the chocolate chips (if using) and vanilla extract, and mix again
Place mug in microwave and cook for 3 minutes at 1000 watts

The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to be virtuous).
And why is this the most dangerous cake recipe in the world?

Because now we are all only 5 minutes away from homemade chocolate cake at any time of the day or night!
